  • 4-6 Potatoes
  • 1 pound of Bacon b
  • 8 oz of Shredded cheddar cheese
  • Sour Cream (optional)
  • Scallions (optional)


  1. Preheat oven to 400°F (200°C).
  2. Cut potatoes in half and scoop out the centers.
  3. Place the potato skins on a baking sheet.
  4. Cook bacon in pan to desired tenderness.
  5. Fill each skin with bacon and shredded cheddar cheese.
  6. Bake for about 15-20 minutes or until the cheese is melted and bubbly.
  7. Top with optional sour cream or scallions.
